Food Friday

We're starting some new fun Friday posts on the Edit Cafe. On Food Fridays, we'll share a review of a recipe from a past or present Barbour cookbook.

Today's recipe is "The Ultimate Chocolate Chip Bar." It comes from the Barbour cookbook In the Kitchen with Mary and Martha: One Dish Wonders, published in 2006. I've made these many times. It's my favorite go-to cookie bar recipe, when I want cookies but don't have the time or desire to spoon out sheet after sheet of individuals. These always bake up nicely for me, without a gooey middle. And I love that rolled oats are part of the recipe, because (imho) oatmeal chocolate chip cookies taste far superior to the regular variety...and I can at least pretend they are kind of healthy!

So here you go:

The Ultimate Chocolate Chip Bar

1 cup butter, melted
1 cup brown sugar
1 cup sugar
2 eggs
1 teaspoon vanilla
2 cups flour
1/2 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon baking powder
2 cups quick rolled oats
1 (24-ounce) package semisweet chocolcate chips
(Experimenting with different chip combinations is fun! I think a combo of semi-sweet and butterscotch is the best!)

Pre-heat oven to 350. Grease a 9x13-inch pan. Mix ingredients in the order given and spread into pan. Bake at 350 for 20-25 minutes. Cool and cut into squares.

I make this a lot, and I have been using old fashioned oats. I like the denser texture it gives the bars.

Sounds delicious!! And you're right about the oats making them 'seem' more healthy. Hey, at least that's fiber. :)
